French Oak is very popular for oak aging premium wines. It tends to add flavor compounds more subtly than the other main types of oak. Pinot Noir and Chardonnay are an ideal match for French Oak because they ‘soak up’ flavor more easily than other varieties (such as Cabernet Sauvignon).
Chips allow winemakers to impart terrific oak flavor and aroma to wines aged in glass carboys, plastic buckets, or steel tanks. Use a single variety or create your own custom blend of different toasts and woods.
Suggested dose is 1 - 3 oz per five gallons; can be added during fermentation or aging. Chips do not need an extended period of contact time. Most of the oak character will be extracted from the chips in 5-7 days.
